The gap is not marketing. It is grade, origin and honesty about what is actually inside the jar.
How saffron is priced
Saffron is sold by weight, almost always per gram. Wholesale grades follow the ISO 3632 standard, which measures three natural compounds: crocin for colour, safranal for aroma, picrocrocin for flavour. The higher the crocin value, the deeper the colour and, generally, the higher the price. In practice this is why 1 gram of top-grade saffron can cost more than 10 grams of a lower grade sold to volume caterers.

Real, unadulterated saffron sold in the UAE typically falls in the range of 40 to 120 AED per gram at retail, depending on origin and grade. Restaurant and hotel volume pricing sits lower per gram but is quoted per tin. Anything sold significantly below that band is almost always cut with turmeric, safflower, or dyed corn silk, or is older stock that has lost most of its aroma.
Why Moroccan saffron from Taliouine is worth its price

How not to overpay
Insist on single-origin, ask for a batch profile with the three ISO 3632 markers, and check that the threads are trumpet-shaped, deep crimson with a lighter yellow-orange base. Bloom a pinch in warm water: real saffron releases colour slowly over 10 to 15 minutes. If the water turns bright red in seconds, you are looking at dye.
